You are not compelled to trade them. When they are drawn they have the quality of a normal pebble. Keep it as a souvenir, if you want, or use it as sling ammunition.
You can draw them in one go, or wait until you traded one to try another pull. Inventory may change, and the man at the crossroads is impatient.
2 is worth more than one, blessing are custom so reasonable to trade 2 for something better.
Its a tier 5 blessing, in power. Some power spent to customize, and allow up to 4 impacts. Some power increased by tradeoff of having significant risk. Is a prosperity god, so wants those who honour him to do well, hasnt been an evil genie with rewards for past blessings (except maybe teferynn mixed blessing)
Apollyon has given drawbacks in past blessings.

Would it not be easier to say you don't know what color the stone you have drawn are until/if you try to trade them in?

If you draw the red stone (at least, after the first draw) then the bag disappears and you don't get to draw any more.
